Gyros Craft
Málaga's modern gyros experience. Meat turning on the spit in the window, vegetables cut where you can see them, and three sauces we make ourselves. Around the clock, on the plaza.
Why it is called Craft
A gyros is thirty seconds of assembly and two days of preparation. We decided the two days should be the visible part.
The spit turns in the window all day. Nothing is carved before somebody orders it, which is why the edges are still crisp when the pita closes around them.
The vegetable tray sits in front of the counter, not behind it. Peppers, cucumber, cabbage, onion — cut in the shop, in daylight, where anyone waiting can watch it happen. The three sauces are ours: tzatziki on a yoghurt base, the Salsa Gyros with sweet paprika, and a cheese sauce that goes over the bowl.
There is a line on the window that sums the whole thing up better than we could: Más natural no puede ser.
Six formats, one spit
The same meat,
cut six ways
Chicken, beef or mixed — you choose at the counter and the price follows the meat, not the format. Add fries and a drink for three euros more.

Carved to order
Built in front
of you, in four moves
The bread goes on the grill
Ten seconds on the plate, so it reaches you warm and pliable instead of dry.
The meat comes off the cone
Only the outer layer is ready. That is the part that is carved, and then the next one starts cooking.
The tray, in daylight
Peppers, cucumber, cabbage and onion, cut in the shop and picked in front of you.
And the sauce you chose
Tzatziki, Salsa Gyros or the cheese sauce. All three are made here; none of them comes in a bottle.
Off the spit
Nothing
sits waiting
Carving in advance means serving something that has been standing in its own steam. That is the whole difference, and there is no shortcut for it.
Inside the shop
Nothing happens
out of sight
The spit, the tray and the grill are all on the customer's side of the glass. You can stand at the counter and watch the whole thing get built, which is a reasonable thing to want from somewhere you eat at three in the morning.
The tray in the window
Fresh is a place,
not a word
Everything that goes into a Gyros Craft pita is within arm's reach of the person ordering it. That is the only version of the claim we are willing to make.
Peppers
Cut in the shop, in front of the counter. The tray is refilled through the day, not stocked once in the morning.
Cucumber
Goes into the tzatziki and onto the pita. Same cucumber, two jobs.
Red onion
Sliced thin enough to disappear into the sauce and still be there when you bite.
Salad
The cold half of the sandwich. It is what stops a gyros from being heavy.
Three sauces, all ours
Yoghurt base, with cucumber, garlic and herbs.
Mayonnaise base, with sweet paprika and tomato.
House cheese sauce — creamy, and it melts into everything.
